This pan works as advertised. The advantages over a similar diameter saute pan are 1)the ease of getting a spatula around the curved bottom when stirring reductions or sauces, and 2)it reduces quicker than a sauce pan or saute pan since the disc bottom is smaller than the top diameter, and a good rolling boil is established for maximum rate of evaporation.

It has a tubular handle that stays cool when used on my electric coil stove elements. I haven't needed to use a pot holder so far. It has no hot spots. It cleans up easily with Barkeepers Friend or in the dishwasher. If you heat it on high while it's empty it it will get some dark spots, (you can scrub them out with Barkeeper's friend) but it hasn't warped.

America's Test Kitchens downrated it in comparison to the (almost 3 times as expensive) All-Clad because the Sitram disc bottom allowed some food to burn at the disc edge where it transitions into the plain stainless steel 'bowl'. I believe their... Read more
